Both Green and Black Tea are made from the leaves of a shrub (Camellia sinensis). In the case of Black Tea, the harvested green leaves are exposed to moist, oxygen-rich air; this process is called fermentation. During this process, they darken to a brownish-black color due to oxidation. Tea manufacturers can control the degree of fermentation. Black Tea is a fully fermented tea. Green Tea comes from the same plant, but the leaves are not fermented; they are only heated and dried, thus remaining green.
